I've been doing weekend catering for small events around Abu Dhabi, nothing huge, maybe 30 to 50 people max, and I'm finally trying to get a bit more organised with how I transport and store ingredients. Right now everything goes into random plastic tubs I've collected over the years and honestly some of them are pretty scratched up which makes me a bit nervous when I'm handling things like marinated chicken or cut fruit. A friend who runs a restaurant told me I should only be using food grade closed crates because the cheaper plastics can leach stuff especially when they get hot in the car. I had a look at crateco and the range is honestly a bit overwhelming for someone just starting out. My question is whether it's actually worth the extra cost for a small operation like mine or if I'm overthinking it. Also does food grade really matter that much if the food itself is already wrapped in cling film or stored in containers inside the crate? Would love to hear from anyone running a similar setup and what you ended up going with in the end.
